These Piña Colada Popsicles are the perfectly refreshing treat for a hot summer day! Made with sparkling water instead of alcohol and sweetened with Monk Fruit Blend, this treat can satisfy a sweet tooth without sidetracking health goals.


 

Recipe

Piña Colada Popsicles


Ingredients

  • 2 oz sparkling water*

  • 3 Tbsp canned coconut cream

  • 1 cup pineapple chunks, blended**

  • 1 Tbsp monk fruit blend

  • coconut for garnish, flaked or shredded*

*plus more if you want to freeze some as a garnish at the top/bottom of the pops

**be sure to strain the juice first if the chunks are coming from canned pineapple 😊


Instructions

  1. Wash hands & clean surfaces and equipment properly.

  2. *Pour some sparkling water into the mold (just enough to fill the tip). Then, sprinkle some coconut flakes in.

  3. Blend all ingredients together in a blender.

  4. Pour into molds and freeze overnight. Enjoy!
