These Piña Colada Popsicles are the perfectly refreshing treat for a hot summer day! Made with sparkling water instead of alcohol and sweetened with Monk Fruit Blend, this treat can satisfy a sweet tooth without sidetracking health goals.

Piña Colada Popsicles
Ingredients
2 oz sparkling water*
3 Tbsp canned coconut cream
1 cup pineapple chunks, blended**
1 Tbsp monk fruit blend
coconut for garnish, flaked or shredded*
*plus more if you want to freeze some as a garnish at the top/bottom of the pops
**be sure to strain the juice first if the chunks are coming from canned pineapple 😊
Instructions
Wash hands & clean surfaces and equipment properly.
*Pour some sparkling water into the mold (just enough to fill the tip). Then, sprinkle some coconut flakes in.
Blend all ingredients together in a blender.
Pour into molds and freeze overnight. Enjoy!
