The nicest non-dairy dessert there ever was.

This post almost seems silly because this recipe only has two ingredients. However, the instructions might be the most important part! Banana “nice” cream has all the frostiness of ice cream, but it also has a natural sweetness and added nutritional value since it is made with whole fruit instead of high-sugar and high-fat ingredients. Beyond that, it’s gluten free, dairy free, easy to make with kids, vegan and vegetarian, and you can easily add your favorite toppings! My favorite mix-ins and toppings are unsweetened shredded coconut and allergen-free dark chocolate chips. The possibilities are nearly endless.

Banana “Nice” Cream
Gluten-free | Dairy-free | No Sugar Added | Vegan | Vegetarian | Kid-Friendly
Ingredients
1 frozen banana, slightly thawed*
3 Tbsp coconut milk (or other non-dairy milk of choice)
Optional/Recommended Add-ins:
2 tsp raw cacao powder
¼-½ tsp pure vanilla extract
Fresh berries
Optional/Recommended Toppings:
Allergen-free dark chocolate chips
Unsweetened shredded coconut
Cacao nibs
Fresh berries
Nuts
Instructions
Wash hands.**
Before beginning, allow for your frozen bananas to thaw for 5-10 minutes. This makes it much easier to blend without taxing your mixing machine.
Add the frozen banana (slightly thawed) to a food processor with an S blade attachment, or heavy-duty blender. Add coconut milk and optional add-ins to the mixture.
Blend the mixture, stopping to use a scraper for the sides if necessary, until it reaches the consistency of soft-serve ice cream.
Use an ice cream scoop to dish the frozen dessert out of the blender and add your toppings as desired. Enjoy!
Notes
*Before freezing the banana, I recommend peeling, cutting into slices, and separating into small bags each containing 1 banana. This makes for easy grab-and-go when you’re making “nice” cream, smoothies, or other frozen fruit recipes.
